Imagine waking up in the Tuscan countryside, surrounded by vineyards and olive groves. You spend your days wandering medieval villages, tasting organic wines, exploring Florence and Siena, learning to cook Tuscan dishes, and, just as importantly, taking the time to slow down and enjoy exactly where you are.
This is La Dolce Vita: A Plant-Based Journey Through Tuscany, an intimate seven-night experience created for travellers who want to discover Italy through extraordinary food, culture and connection, at a gentler pace than the usual whirlwind tour.
Who’s Behind It
The retreat is hosted by Talita Trygsland, an event and retreat planner and the founder of Spire Connection. Originally from Norway and now based in Los Angeles, Talita creates high-end experiences designed to connect people and leave a lasting impression. Savour Italy Tours is delighted to partner with SPIRE Connection to bring the retreat to life, handling the itinerary, guides, transport and the thousand small details that make a week in Italy feel effortless.
Your Home for the Week
You’ll stay at Vegan Agrivilla I Pini, an organic farmhouse estate tucked into the hills near San Gimignano. It’s the kind of place where the vegetables on your plate were picked that morning a few hundred metres away, and where the evenings end with a glass of the estate’s own wine as the light fades over the cypresses.
Each day you’ll head out to explore some of Tuscany’s most iconic places, then return to the quiet of the villa. No packing and unpacking, no changing hotels. One base, one week, one region to get to know properly.
What Your Week in Tuscany Looks Like
- San Gimignano and Siena, including a Tuscan lunch and organic wine tasting
- Florence, with a local guide and a visit to the Accademia Gallery to see Michelangelo’s David
- Two leisure days at Agrivilla I Pini, to actually relax and enjoy Tuscany
- Chianti, with a plant-based lunch and organic wine tasting at Castello di Vicchiomaggio
- Pisa and Lucca, plus wine, olive oil and a multi-course Tuscan lunch
- A private plant-based cooking class using seasonal, locally sourced ingredients
- Welcome and closing experiences with the group
- Private transportation and expert local guides throughout
The itinerary is intentionally designed to balance exploration with rest. You’ll see the Tuscany you came all this way for, without feeling like you’re racing from one attraction to the next.
Food at the Heart of It
Tuscany is one of the easiest places in the world to eat plant-based without ever feeling you’re missing out. The region’s traditional cooking is built on beans, bread, vegetables, grains and olive oil: ribollita, pappa al pomodoro, panzanella, wild greens, pici with fresh tomato, chestnut flour castagnaccio.
Across the week you’ll eat your way through all of it: long lunches at wineries, olive oil tastings, organic vineyards, and meals created to show just how extraordinary plant-based Italian food can be. On the final full day, you’ll step into the kitchen yourself for a private cooking class at I Pini and bring a few of those recipes home.
