Today Azienda Agricola COS was first on our agenda. It was a beautiful morning to be outside with a wonderful breeze and deep blue skies above. Joanna greeted us and invited us on a tour of the facility. Founded in 1980, COS has been running a fully biodynamic and organic operation. In the spirit of ancient Greek cellar practices, COS opted to work with amphorae, clay jars that used by the ancient Greeks. Today COS imports handmade amphorae from Spain to be used as their vessels for vinification. They are buried up to their necks in stone, filled with juice and then nature is allowed to take her course.
In another low lit building are their concrete tanks all the while Chopin was playing softly in the background. After the tour we were invited to sample four of their products: Pithos Bianco DOC – 100% Grecanico – fermented with skins on imparting some tannins to this white wine, Frappato, Nero di Lupo (100% Nero d’Avola) and Cerasuolo Vittoria Classico DOCG (40% Frappato, 60% Nero d’Avola). After the tasting we wandered the grounds and admired the beautiful Sicilian scenery that surrounded us.
